Chef Rob’s life journey is a testament to his passion and dedication to the culinary arts.
Parrot Cove Lodge has a fascinating history that dates back to its origins as "Pleasure Cove Lodge" in the
mid-eighties. Back then, it had a different vibe and concept, offering a unique experience for couples
and friends. Over the years, ownership changed hands, leading to a transformation into what is now
known as "Parrot Cove Lodge," with a new vision and focus.
Chef Rob's culinary journey is equally captivating. He started as a humble pot washer in the Netherlands
and climbed the ranks, gaining valuable experience across Europe. His adventurous spirit led him to
explore various countries, including Switzerland, Austria, Germany, and the UK. The Caribbean beckoned
next, where he spent more than a decade in Aruba, Bonaire, and Curacao, embracing the flavors and
cultures of the region.
In 1999, Chef Rob arrived in Belize, adding another chapter to his culinary adventure. He took on
respected roles as an Executive Chef and Director of Food and Beverage, showcasing his culinary talent.
Despite skepticism, in 2008, he and his wife embarked on a new journey by opening a restaurant in
Hopkins Village, a venture that proved to be a success.
The story took another turn when they relocated their restaurant to Parrot Cove Beach, eventually
taking over the lodge as well. This expansion allowed them to offer not only enjoyable cuisine but also a
unique beachside experience for their guests. Chef Rob's dedication to his craft, combined with his
Corrie’s commitment to providing exceptional hospitality, has shaped Parrot Cove Lodge into a haven
for both food enthusiasts and travelers seeking memorable experiences.
Rob and Corrie's vision to craft a destination they themselves would love to vacation at has
been instrumental in shaping Parrot Cove Lodge into a true sanctuary for not only those
passionate about fine dining but also for travelers seeking unforgettable and immersive
experiences. This personal touch has infused the lodge with a unique atmosphere that resonates with guests, making their stay and dining moments truly special.
